Evelyn's Deviled Eggs
Ingredients:
- Eggs
- Mayonnaise (add just enough to hold the mixture
together)
- Curry (start with just a dash and add to taste)
- Salt/Pepper to taste
- Preparation:
- Cook the eggs but do not bring them to a rolling
boil (overheating the eggs causes the yoke to
darken). Cool the eggs in ice water as soon as
they are taken from the stove (putting the hot
eggs immediately into cold water helps to
separate the shell from the egg). Cut eggs into
halves and remove the yokes. Mix the yokes with
the other ingredients and spoon them back into
the eggs. Let set in the fringe until cold (about
1 hour).
