Green Peppers Stuffed With Mashed Potato Salad

Ingredients:

  • 2 # Potatoes, peeled, cooked and mashed
  • 2 hard-cooked eggs, diced
  • 1/4c pickle relish, drained
  • 1T instant minced onion
  • 1T chopped pimiento
  • 2T vinegar
  • 4 small green peppers
  • Parsley sprigs.
Preparation:
Mix potatoes, eggs, relish, onion, pimiento and vinegar; chill.
Cut tops off green peppers, remove seeds & membranes. Wash peppers and pat dry.
Just before the meal, spoon potato salad into pepper shells and dress with parsley sprigs.
