Green Peppers Stuffed With
Mashed Potato Salad
Ingredients:
- 2 # Potatoes, peeled, cooked and mashed
- 2 hard-cooked eggs, diced
- 1/4c pickle relish, drained
- 1T instant minced onion

- 1T chopped pimiento
- 2T vinegar
- 4 small green peppers
- Parsley sprigs.

- Preparation:
- Mix potatoes, eggs, relish, onion, pimiento and
vinegar; chill.
Cut tops off green peppers, remove seeds &
membranes. Wash peppers and pat dry.
Just before the meal, spoon potato salad into
pepper shells and dress with parsley sprigs.
